It seems like the pony ai art gen doesn't know how to do horses. Because Saddle Arabian ponies look like horses off a carousel ride. And in general have longer snouts.

Maybe you can continue with this concept at another time? I've grown to love this world you've built so far, and I'd love to see it expanded upon without any time limitations when it comes to releasing chapters
