Technically we can actually eat certain grasses as well, its just that things like hay or straw which are edible for horse's/ ponies are basically inedible to us. Also Grain is a type of grass but in general we don't consume the whole plant but the grains they produce.

More so that he is in love with Cadance, but isn't quite able to pursue that relationship just yet. Rarity misunderstands Shining Armor's refusal to date/herd up with any of the eligible noblemares as because he is gay. Shining Armor rolls with it.
