902608 Luna's imprisonment in the moon caused her body to be put in a sort of stasis as opposed to Celestia who continued to age. The immortality was linked to her alicorn powers and since Luna did not age when she was trapped in the moon, she simply became a regular pegasus again and lived out a normal pony life.
