Plant life grows wildly, animals prowl the woods, soldiers are better trained and equipped, everyone can speak freely, eldritch horrors are destroyed on the spot, the economy takes an unexpected boom, and Equestria becomes an even more diverse and friendly place to be.

Big question. How do we know that Equestrian life actually needs a massive amount of light radiation to function? We are talking about a magical world. No telling what access to that kind of force will affect how life does its thing.
Can NM just change the physiology of those plants and animals so they can live without sunlight with mutation spells or such things? Or just create an artificial sun in every controlled environments (domes) to keep the biome alive? Just my thoughts.
7061727 We don't really know if they need sunlight. It is entirely possible that the moon gives off enough light and heat in this world to keep everything alive. Just look at the season finale. It had been night for at least a year and everything's find.

If by everything, you mean the area immediately surrounding Nightmare Moon's castle (which NMM would have a particular interest in keeping nice), sure. For all we know, everything outside the immediate area where Nightmare Moon reigns from is a -50 degree wasteland.
The Cutie Map was kind of tough to see in that timeline, but in the brief shots we were given of it, it was completely flat, other than the mountains. In addition, we already know that Ponyville was swallowed up by the Everfree, since the Cutie Map was smack dab in the middle of the Everfree Forest. If most or all of the Equestrian towns and cities are gone or engulfed by the Everfree, that's not a sign that "everything's fine".
Speciesism against Dragons is not a good sign for the state of non-pony residents of Equestria, either.
