She's deeply inclined to trust the obvious source of the changes, wants to spend time with her friend, she realizes whatever it is will require some adjusting but that trust precludes her from worrying.

A couple of answers to that.
A) If you include an originally Human Sunset Shimmer, that's pretty much your fics entire premise. If you are doing anything else you don't have twin meetings.
B) For a lot of people, Sunset Shimmer /is/ thought of as human so it just feels odd making another version the human version. Then there would be two Human Sunset Shimmers.
C) Sunset is a character with a lot of baggage tied to her situation. You have to make the duplicate Sunset Shimmer while untying her from her situation, this is actually legitimately hard. You could of course ignore that baggage but then she will feel off, it does after all have to be the same character.

Here it adds more to Sunset's want and apprehension to return home. It also keeps things simpler because I don't need to go create a Family for Sunset which would be a major deal either way, I can just combine that with dealing with Celestia.

I mean on the day to day level you've got something like look before you sleep, where we see Twilight try to apply knowledge to a sleepover and it fails.
A big part of the past stuff was giving a reason and shown difference to twilight in their relation to magic, as to the established more mystical attitudes sunset takes.
And yes the next chapter is taking forever to write, Imagine writing a conversation between two people who value experience over knowledge talking about shit that's by definition unknowable. It's hard.

Not stronger, equals. There's more to equality than power. Twilight has very few ponies she can have a relationship as equals with, and now that is crumbling around her as Sunset is entering this whole new world that she can't experience.
It's "What about Discord." writ large in her mind.
The original version had a mentor character who everyone glomped onto and I didn't want to cut that, Besides when doing mystical bullshit sometimes you really do just need an exodump(Like as much as I need to do more showing, espicially considering mysticism I have to get you in the right mindset.), I also needed a character who existed in that world whose understanding was fundamentally different so blossom had to play that role as well.
I do try to keep blossom in the background to hopefully avoid the reason you stated, she isn't the focus but a guide(and later temptation.) for Sunset into the world of Mystical truths. I possibly overdid her use of magic but I was attempting to communicate the filter of her enlightenment through those actions.
But really sueishness is about story gravity and lack of conflict.

Sure but you just made a big assumption, they all go to college. The same college in fact, so you are assuming these life long friends are part of the same social class.
Applejack is definitely not going to college. She's southern and blue collar and wouldn't pretend to not be that for the interview so college is right out.
Pinkie pie probably won't and will stay working at the cakes.
Fluttershy will likely go to a community college or trade school for veterinary.
RainbowDash will probably get a sports scholarship, probably to a good school. Of all the cast she has the most options of colleges, but even then she'd need to go to one with a good team.
Rarity with her desire to escape her class will however definitely go to a live in college so she can break into that social class.
SciTwi is explicitly upper class, and already talking about college and good colleges the kind you need connections to even think of going too.
The show exists in a world that would make marx giddy at how little class variation there is.
