I would definitely enjoy seeing how you develop your knight. He may not be Excalibur, but he sure knows what's right and what isn't.

Ahh....Justice. Such a sweet thing that will always leave a taste of fulfillment for the righteous.
I always have had an affinity for stories such as this, where you seek to rewrite a horror written by another author. Not that I have anything against the Fall of Equestria universe. As far as grim/dark fics go it is great, seeing as how it leaves me feeling helpless reading about all of the atrocities committed against the innocent and helpless.
But these kinds of stories, which I call the Liberation Fics, are fabulous. After all, who doesn't like a happy ending in the form of bringing a Righteous Fucking Hammer down on the heads of evildoers?

If I may suggest something, two stories of mine. "Etiamsi Omnes, Ego Non" and "Etiamsi Omnes, Ego Non- The Promises." They are also against Fall of Equestria. The second set even takes classic inspiration. One chapter has an epic poem the other is Chaplin's speech in "The Great Dictator."
