Eventually I hope to have stories written for all the main shipping pairings so Sparity will be written eventually. A few other shipping's I'm planning include a Twixie story, A Twipie story possibly even a ApplePie story

ApplePie ... So delicious and other than Taken for Granite I have yet to find any ApplePie fics. It's so under utilized but would be great. Are you planning on doing an ApplePie ScootAdoption? Rainbow Dash has been done to death, but Pinkie Pie and Apple Jack would know what OrphanLoo is going through. Apple Jack having lost her parents, and only having her siblings and grandparents standing by her. While fanon shows Pinkie Pie basically being abandoned by her family, and being homeless until the Cakes took her in.
Together they would be amazing.
TwiPie is one of my top 4 Twilight pairings. The dissonance of their personalities actually manages to make things both amazing and possible. Enough conflict for things needed to work through together, but just enough there for it to not just work. But be spectacular.
Twixie is a nice ship.

I believe I've only read two TwiPie stories, several Twixie stories but I have yet to see a single ApplePie story. I can see it being difficult to pull off, but I think it could be a fun story to write. Hmm any other pairings that are underdone?
Also, about the Scootadopt, I have plans for that already in motion, but I could always include that in another story

Ohhhh! Please tell me what story is putting that in motion? I must know? So far that one shot. Taken To Soon was nice but I didn't know another story of yours was putting it in motion.
As for underdone.
Trixie and Luna. OMC! I would love to see a good Luna and Trixie fic. Luna and Trixie are both lonely, alone, and under appreciated. Heck, The Mane 6 destroyed Trixie's life, mostly through neglect, not putting things right, or correcting rumors that haunted her. So she's even more alone and lost than ever before [I love the Mane 6, but them never correcting the rumors of Trixie's actions, Rainbow Dash's hypocricy that caused everything to start, and allowing a pony who was trying to make others happy through entertainment "putting on a show / telling a story". To have her only form of income lost. Then when Trixie Shows up again, even Pinkie who loves everyone insults her. So after what she ends up doing to Ponyville [and the possible global, economical damage it could have possibly done] she's in a right state].
If any pony knows what it means to be hated, and feared. And the need to be redeemed in the public eye. It's Luna. They both have so much in common. So much that could be done with both of them. Both Pre, and Post Magic Duel. That I am utterly dumbfounded why there isn't any fics for them. It's a true Tragedy that Twi gets Trixie, and Both Princesses, and every pony under the sun. Yet Trixie never really gets Luna. She's always in the shadow of other ponies trying to rise high enough that she would be noticed and appreciated, yet fails time and time again. Then turns to darkness so that she can finally see the light, only for it to turn horribly against her. The similarities are all so perfect. But never done.

Spike and Scootaloo. I know that it seems like a weird ship. But Spike is a down played and stupidized character. Yet ... He's as old as the CMC. He lives with a hyper OCD, genius, if not near genius, super mage. And has been raised by that pony since birth. Knows all books in her residence where ever that may be, is good at research, and while mentally as developed as a colt. Is as smart as Twilight.
And Scoots has a lot of personality traits as the pony she idolizes. Can you say Cross-species, Straight TwiDash alternative? It would have alot of the same interesting interactions as TwiDash. But added in Draconic, very male, personality quirks. And the innocence of young, first love. Well for Scoots, for Spike it would be seeing Rarity as unobtainable, yet a good friend (possibly if / when Rarity sits them down to talk and breaks off the crush in a gentle matter). Seeing it as a crush, allows himself to see the ponies around him with fresh eyes. And then TwiDash. SpikAloo style.

Twi and Rarity. That has so little love. Just like RariJack. Both Rares and Twi are hard working, dedicated, and caring ponies. Both would do anything for a friend, but as while alot is known about Twi. Few ponies look past the self-centered, manipulative, bitchness that Rarity puts up to protect herself from the equally as shallow nobility that she needs if she's to succeed. But while Rarity does those things as a mask. She has to be so much more than nobility because she's fighting an uphill battle. That battle being the circumstance of birth.
Twilight is minor nobility by birth, and now that Shining has married Cadance. Is directly related to Celestia and Luna by extended family due to marriage. Not to mention that all of the Element Bearers were Knighted after Discords defeat in season 2. Yet even though a Knight (Related to a real Knight in Shining Armor), Ascended Royalty (depending on how you want to see it, what season it takes place in, or what AU you're doing. It can be taken in many differnet ways), and the Princesses personal Protege`. She never let it control her, or change who she is. She's approachable, lovealble, caring, and kind. Everything that Rarity ever wanted in a pony. Yet was never able to obtain.
Literally having what you wanted under your nose the entire time waiting for you to see it. Type of Romance. The type of Romance that kills. Yet it just has none. At least I haven't seen it. And I don't count one shot clop fics. Those really don't do them justice.

Also, I love the ship's you suggested, and I have an amazing idea for Lunixa (Trixie + Luna= I have no idea what to name it!) 
I might just have to go ahead and start up a new story!
Maybe after I get a bit more variety I will do a TwiRarity, just so I don't have a dozen ships with Twilight as the base in all of the stories
