Applesauce muffins are really good. After they bake, I roll them in butter, then cinnamon sugar. They're really tasty! But maybe they don't count as cupcakes? I make applesauce cake too. You could easily put the batter in a cupcake tin and make applesauce cupcakes. They need caramel icing to be amazing. It's really hard to make the icing, but oh so worth it for that caramel candy taste. By far my favorite. Don't know the recipe though...
