While they are indeed sapients, their behavourial patterns may be very different, unless you want to completely equate human=pony in your fic. But many fics with really sky-high ratings managed to pull it off. In the show ponies are shown quite clingy and prone to excessive skinship with their friends, compared to humans. Then, a little scratching behind the ears is not to too far off, if you have a proper level of relationship with certain ponies.
And yeah, continuing this line of thinking, reactions like a little horsey noises when they are pleased with something can be cute, distingishing them from their human counterparts. Just don't go full horse mode
