My headcanon is that on the one hand, her money didn't change, but on the other, most denominations of bits have slightly more gold than seawater. Once Sunset ascertained the nature of the world she lived in (which involved a few nights sleeping in the CHS library, using the showers in the locker rooms, etc.) she sold most of them to an eccentric numismatist who specializes in the coins of fictional worlds (and who may or may not be Discord.)
As for the loft, I like the idea that it belongs to the human Sunset Shimmer and pony Sunset stumbled on it while Googling her own name. (Said human signed the lease with her parents' approval, because of course Sunset Shimmer could talk her parents into giving her a loft at 14. She's Sunset freaking Shimmer.)
