Building on the idea of the Apples being landed gentry (which was realized perfectly by FanofEverything in https://www.fimfiction.net/story/467693/noblesse-applige), Applejack did have to put her charm school education with her Orange family relatives to use: Namely by going off and schmoozing with other noble foals.

One of these foals was a very young Prince Blueblood, who was kind of a wuss and mama's colt. Who got bullied by other noble foals... Until young Applejack put a stop to that. She and Blueblood become friends: Blueblood helps Applejack deal with high society, and Applejack helps Blueblood become a tougher, better pony.

At some point, Blueblood realizes he's in love with the reluctant Lady Ponyville... But he can't bring himself to admit it and risk their friendship.

And then, after the Grand Galloping Gala, after Blueblood and Rarity become friends due to Applejack's intervention, Rarity realizes just how Blueblood feels for Applejack... And schemes.

Maybe she can't be a princess... But she can make sure her friend becomes one!

What could go wrong?

Well, as the Apple family received their lands by royal grant (to the family), they own their lands as nobility. Nonetheless, they weren't introduced into the peerage, thus they aren't technically nobles. This makes them yeomans, which is a sort of medieval middle class: nobility doesn't own them, yet don't own peasants, and the extend of their lands is a little too small to be called even a county.

Hmm... But where/when would the story start?

And apt scheme, though. Clearly it needs to expand to include input from several other princesses.
