If you’re anything like me, once or twice a year you manage to actually find a list of tags on this site, since you have to jump through several hoops to get to it. Once again I have found it, and it’s worth spending 10 or 15 minutes exploring it.

Like, as far as crossovers go, there are twelve stories tagged “Winx Club”. What the fuck is a Winx Club?!? On the other hand, there are no stories with the SCP foundation tag despite the fact I know for a fact that there are like at least five or six of those in existence. But maybe they were mostly written many years ago when SCP was a bit more popular.
So yeah, have fun, let me know any interesting observations you make.

The ability to tag a fic with other series is a relatively recent addition, iirc, so older crossovers couldn't be tagged at the time.

A lot of those crossover tags didn't get added until fairly recently, at the same time you had to tag stories as "MLP: FiM" instead of that just being the default assumption. If those stories are older than the new system, then they'd only be tagged SCP if the authors knew that was a thing now and cared enough to go add the tag. I've occasionally gone through and added new tags when, for instance, a new character tag becomes available and I'd just had to use "other" before, but I haven't gone back to old stories to add trigger tags (suicide, death, etc.). I've only ever published one crossover, and I wouldn't want to add a tag for what it's a crossover with, because that would ruin one of the twists. It is interesting to see what crossover tags have been made available though. I've had fun browsing fanfiction.net to see which shows I've seen have only a small number of stories there. I think I remember Prince of Tennis only having one.
Winx club was a decent show very similar to W.I.T.C.H., if you've ever heard of that one. I liked Winx less and never really kept up with either. Apparently there's a Winx reboot out now. It's a fairly Harry Potter-like premise, at lest the original. I don't know anything about the reboot, other than it's aimed at a younger audience than the first one.
And now that I look at the full list, it's interesting to see which crossover tags were created but never used. Not sure why they were made. Someone asked for them to be, or there were existing stories using those properties that never went back to add the tag?
