The Emminence-Class Enterprise-F is my favorite. I haven't seen a quartet of nacelles like that in Star Trek before, I think it looks good.
The last one looks like a good transition towards the Federation Time Ships, but it looks like Enterprises stay looking fairly similar to the ships we know at least until J.

I vastly prefer the larger version with a secondary hull to the Stargazer. I don't think it's a canon design, though.
