With Fimfic writers using words like nuzzle, muzzle, and zebra, I wonder what the usage of the letter z is in horse words, and how much greater it is than in typical fiction writing.

Not sure what the numbers are for horse words, but in the common English lexicon, z is the least common letter, accounting for just 0.07 % of all letter usage. If I had to spitball a random guess, I'd peg it at around 0.15–0.20 %.
