"Please, good sir, tell us. Given the fact that you, sir, are BEST AT PONIES, and also the science fact that Rarity is BEST PONY, surely these things are related? So tell us, please, how do you write Rarity? As surely you have been sitting on this secret for various inscrutable reasons and not because you have been lazy."
WELL LET ME TELL YOU.
Step 1: Drink drinks. FANCY drinks. Like, the kind of cocktail that can only be properly mixed by someone wearing suspenders.
Step 2: Watch this.
Step 3: Reflect on how Rarity is honestly one of the more interesting characters on the show as it would be entirely too easy to write her off as 'the prissy one' except for the fact that she's granted a surprising amount of depth and agency instead of just being the punchline for various jokes about being girly.
... and then maybe use her as the punchline for various jokes.
Also then have her pine after/romantically bicker with Applejack 'cause seriously that shit is canon, I tells you. CANON.
And the rest just writes itself.

I cry, but only for really dramatic stuff (or extremely wholesome stuff). I guess that's the type of thing Rarity would cry about too?
Seriously though, people keep forgetting how Rarity went from straight up kicking a manticore to very prissily cutting her tail for a vain water serpent, and in the same episode more or less.
Rarity is kinda the thematic anchor of the series, in a way. Rainbow Dash is there to tell girls that they don't have to like dressing up and looking pretty, but Rarity says that if you do, that's cool too. It's an angle that's often overlooked, imo.
The thing about Rarity is that she's full of contradictions. She's greedy and vain, but also generous to a fault; she's super-prissy and girly, but also ready to kick ass if needed; she's intelligent, hard-working, perceptive and mature, but also prone to marshmelodrama, complete with fainting couches and ice cream binges. And she's fabulous as heck whatever she's doing.
