My thought process gets weirder the later it gets in the night. I just doubled the length of my current Creative Writing project from around 1k words to 2k even though I only really had like, another paragraph that was really needed if I wanted to kludge together a conclusion to the story. Instead I ended up diving straight into linking up backstories and scenes from earlier on and fleshed out the protagonist more than I even planned to in the first place.
This is the reason why I do most of my writing at night. While my thoughts get a little scrambled as far as what my mind wanders off to, it's a lot easier to focus on what you're writing when every distracting noise and light is gone.
