In my family, the holidays means spending time with family and that it turn means plenty of baking!
My next two contributions turned out pretty well so I had to share~!
Hearth's Warming Vegan Oatmeal Cookies (with and without walnuts)

My modifications: The cookies are too cake-like for my tastes so I add an additional 3/4 cup oats on top of whats called for. Also, the dough does get a tad dry so I moisten it up with just a few tiny splashes of soy milk and that makes it nice and cookie dough like. With these changes it should make about 24 good sized cookies. I bake for just 12 minutes for a perfect golden brown.

My modifications: Not originally vegan but super easy to alter. Just swap the milk for alternative milk - I use soy milk. For butter, just use a vegan alternative again like vegetable oil spreads without animal products in them. (In my family we never used butter anyways and always substituted margerine.) I use Smart Balance spread and it comes out great every time. If possible, try using bone char free sugar - I found one at my grocery store that was almost the same price as the regular stuff.
I buy stuff like oats and walnuts in bulk pretty cheap so that made these delectable delights pretty cheap too!
