As of about 1:19 Central Standard Time (Texas), Saturday, July 16, 2016, here is what I learned from individually searching through each tag in the browse option on the first page of fimfiction as well as using the site statistics link at the bottom of each page:

Between about 790-1550 at any one time
From my personal observations, based on the time of day, the number of users logged online tends to fluctuate between approximately 790 at around 3AM Central Standard Time (Texas, USA) to around 1550 during peak hours from around 7PM-11PM Central Standard Time. These are estimates.

With the exception of 2011, everything past that time has been constant in terms of which type of story is submitted. Teen ratings are the most common, with Everyone ratings in second place and Mature ratings in third.
Guess writers like to have a little more creative leeway when it comes to creating a more mature storyworld for the MLP characters.
