So hopefully I'm not breaking any rules or anything by doing this... Anyway... I really like cooking and I figured I'd give this a shot. Maybe someone will actually like it!
Garden Veggie Frittata
Ingredients
Note: You can adjust these according to your tastes or dietary needs!
2 Tablespoons olive oil
8 large eggs
1 Cup sliced mushrooms
1 medium onion, chopped
5 ounces fresh baby spinach leaves
2 plum tomatoes, chopped and seeds removed
1/4 Cup whipping cream
1/3 Cup grated Parmesan cheese
1/2 Cup shredded Mozzarella cheese
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Steps
Turn your burner up to medium-high heat. Add oil to warm medium skillet, make sure to coat the bottom and sides! Once you've coated the pan add your veggies EXCEPT the spinach!
Saute until most of the liquid from the mushrooms has cooked off. (About 10 minutes.) Add your spinach and saute for an additional 5 minutes or so. You want the spinach to be a little wilted and dark.
While your veggies are cooking whisk your remaining ingredients EXCEPT the Mozzarella cheese together.
Reduce heat to medium. Try to distribute the veggies somewhat evenly in the pan. Pour the egg mixture over the veggies. Cover and continue to cook on medium heat, occasionally poke through the mixture to allow the uncooked eggs to reach the bottom of the pan.
When the top of the eggs has almost set and the bottom is set finish cooking your frittata by covering it with a lid for a few more minutes. If you'd like the top cooked more you can set your pan under the broiler for a minute or two. If your pan isn't oven friendly you can flip the frittata over by using a dinner plate. Place the plate over the of the frittata (hold it firmly) and turn the pan upside down. Then slide the frittata back into the pan for a minute or so.
Cut into wedges, sprinkle with Mozzarella cheese (maybe a little salt and pepper to taste) and serve!
