I spent Thanksgiving with my family, my Filly, and some old family friends. It was nice.

Around this time last year I posted a story about the holidays and pie and what that means to Applejack me, and in the comments on the story and the accompanying blog post, there was talk of sharing the recipe that precipitated the story. Last year I'd been busy with the end of the semester and Christmas approaching, and forgot about it, but I was reminded as Thanksgiving approached and I prepared the first of this year's two pecan pies.

You'll need the following:

1 unbaked pie shell (I use storebought Pillsbury ones; feel free to make your own)
1/4 cup melted butter
3/4 cup granulated white sugar
1 cup light (not Lite) Karo corn syrup
3 large/jumbo eggs
1 tsp vanilla extract
1 cup pecan halves (buy a good-sized bag and go through them to pick out the best ones until you have a cup)

Preheat your oven to 350°F.

Lightly flour both sides of your pie shell and put it into a 9" pie plate (preferably glass), gently pressing it down to ensure there are no air pockets, and set it aside.

With a whisk, cream together the melted butter and sugar, then add the corn syrup and mix until smooth. Add the eggs one at a time, beating each until blended. Stir in the vanilla extract and pecan halves.

Pour the mixture into your waiting pie shell and bake for ~45 minutes, until golden brown. If you don't want your pie crust to brown too badly (I -- taking after my father -- do not do this), after the first 15-20 minutes in the oven, put foil over the crust.

Allow to cool before serving; I frequently make mine the night before it's meant to be consumed.

Serve with fresh whipped cream.

Haha, yeah, I thought that was funny.

Ahh, my mom makes these very often for birthdays and other family parties. Not surprising, since she's a real fan of pecans. She uses maple syrup, though.
